Recipe for Potato File Soup

Preparation time: one hour

Number of servings: four to six


  • 6 large red potatoes
  • 1 large chopped onion
  • 2 cups of milk
  • 3/4 stick or margarine
  • 1 bunch of green onions tops
  • Salt and pepper
  • 1 tablespoon of file` or add more to your consistency

Cooking instructions:

Peel and cube potatoes, boil in approximately 2 quarts water, add salt I added until tender. Cook in an instant pot, fry meat, drain off excess fat, saute onion until wilted, add potatoes and water, milk, margarine and green onions(salt and pepper to taste). Simmer for about 45 minutes to an hour. Serve in a soup bowl.…

Recipe for Red Beans, Rice & File

Preparation time: two (2) hours

Number of servings: ten to twelve


  • 1 pound of camelia red beans
  • 1 large yellow onion
  • 3 tablespoon garlic powder
  • 1 tablespoon of black pepper
  • Meat of your choice (ham, beef sausage)
  • If vegetarian no meat at all
  • 1 tablespoon of file`
  • 1 tablespoon of salt or no salt at all

Cooking instructions:

Soak 1 pound of red beans over night in water (2/3 of pot covering the beans in pot), making the beans softer when cooking the next day. You can drain water off or use the water to cook with. Chop onion into small portions and add to pot of beans. Add your garlic powder, pepper , salt (none), meat (none) and file`. Place pot on a medium fir with top on, stir about every fifteen to thirty minutes for the first hour, and then ten to fifteen minutes the last hour of cooking. Add water as needed during cooking process. For the last thirty minutes lower fire to half of the original cooking temperature. Serve over rice of your choice (white or brown).…

Recipe for Seafood Gumbo

  • 2 lbs. Shrimp, peeled and divined
  • 2 lbs. Smoke sausage
  • 2 lbs. Chicken parts
  • 2 lbs. Ham, chunked (if desired)
  • 2 cans of crabmeat
  • 2 cups of celery, chopped fine
  • 3 cups of onions, chopped fine
  • 6 cloves of garlic, minced
  • 2 gallons of water/ Ist gallon at first, 2nd gradually as needed
  • 2 teaspoons of parsley, chopped fine
  • Uncle Bill’s Creole File`
  • 2 bay leaves


1 1/2 cups of oil
1 1/2 cups of flour

Pour in oil, medium heat. When oil is hot, stir flour in gradually. Lower heat, it is very important that you keep stirring constantly. After all of the flour has been combined with the oil, turn fire down very low and cook until golden brown, stirring constantly.

Brown chicken in the oven. Make roux, add onions and celery to roux. Cook until onions are wilted and then add water and garlic. Cook in heavy uncovered pot over a medium heat for twenty minutes. Season to taste with salt, black and red pepper. Add shrimp, sausage, chicken, ham, crab meat and parsley to mixture; cook another thirty minutes, add bay leaves, then let come to boil for ten minutes. Serve in soup bowl with cooked rice. Use dash of Uncle Bill’s Creole File` in each plate, if desired. Serve with French bread.…
