Recipe for Potato File Soup

Preparation time: one hour

Number of servings: four to six


  • 6 large red potatoes
  • 1 large chopped onion
  • 2 cups of milk
  • 3/4 stick or margarine
  • 1 bunch of green onions tops
  • Salt and pepper
  • 1 tablespoon of file` or add more to your consistency

Cooking instructions:

Peel and cube potatoes, boil in approximately 2 quarts water, add salt I added until tender. Cook in an instant pot, fry meat, drain off excess fat, saute onion until wilted, add potatoes and water, milk, margarine and green onions(salt and pepper to taste). Simmer for about 45 minutes to an hour. Serve in a soup bowl.
