Recipe for Red Beans, Rice & File

Preparation time: two (2) hours

Number of servings: ten to twelve


  • 1 pound of camelia red beans
  • 1 large yellow onion
  • 3 tablespoon garlic powder
  • 1 tablespoon of black pepper
  • Meat of your choice (ham, beef sausage)
  • If vegetarian no meat at all
  • 1 tablespoon of file`
  • 1 tablespoon of salt or no salt at all

Cooking instructions:

Soak 1 pound of red beans over night in water (2/3 of pot covering the beans in pot), making the beans softer when cooking the next day. You can drain water off or use the water to cook with. Chop onion into small portions and add to pot of beans. Add your garlic powder, pepper , salt (none), meat (none) and file`. Place pot on a medium fir with top on, stir about every fifteen to thirty minutes for the first hour, and then ten to fifteen minutes the last hour of cooking. Add water as needed during cooking process. For the last thirty minutes lower fire to half of the original cooking temperature. Serve over rice of your choice (white or brown).
